Recipe for Risgrynsgrot
I’ve received a few requests for a recipe for this traditional Scandinavian Yule food, so here it is:
Risgrynsgrot (Rice Pudding)
6 1/2 cups almond milk 1 cup rice 3/8 tsp. salt 3/4 cup sugar 3 tsp. vanilla 3 tsp. cinnamon
Combine milk, rice, and salt in saucepan and bring to a boil on high heat. Reduce heat to medium and simmer until rice is tender (about 30 min.). Stir frequently while simmering. When rice is tender, remove from heat and add remaining ingredients. Return to stove and stir until pudding thickens (5-10 minutes).
If desired, hide a lucky almond in the pudding for someone to find.
May be served hot, cold, or room temperature. For variety, add raisins or a little nutmeg.
Ingredients may also simply be combined in a crock pot early in the day and then stirred periodically throughout the day to prevent sticking and burning. There are some subtle differences in taste and flavor, but it’s a little less laborious.
